  • 3-4 ounces sparkling mineral water
  • 1/2 ounce coconut water
  • 1 dash orange bitters

Method
 

  1. Start by gathering all your ingredients. Wash the strawberries and mint leaves thoroughly. If you haven't made honey syrup yet, now's the time to heat equal parts honey and water until blended.
  2. In a sturdy glass, add the ripe strawberries. Using a muddler, crush them gently to release their juices. Follow this with the chocolate mint leaves. Lightly press down with the muddler—enough to get the oils out without tearing them apart.
  3. Next, pour in the fresh lime juice and honey syrup. Adjust the syrup based on your sweetness preference. If you have a sweet tooth, feel free to go heavy. Stir the mixture gently.
  4. Add the white rum at this point. Stir to combine all the flavors thoroughly.
  5. Here’s where the magic happens. Pour in the coconut water gently, then top it off with sparkling mineral water. Use a spoon to stir lightly, ensuring everything is well mixed without losing too many bubbles.
  6. For a final touch, add a few whole strawberries on top and a sprig of mint for garnish. Serve with ice and enjoy your summer evening.
