  • 1 tablespoon oil from the sun-dried tomato jar
  • 2 tablespoons finely shredded Parmesan cheese

  • 2 Roma plum tomatoes sliced into ¼-inch rounds

Step 1: Prepare the Roasted Tomatoes
  1. Start by preheating your oven to 375°F (190°C). Slice the Roma tomatoes into rounds, and spread them out on a baking sheet. Drizzle with olive oil, and sprinkle with minced garlic, Italian herbs, salt, and pepper. Roast for about 20 minutes. This step is crucial, as it intensifies the tomato flavor, making them utterly irresistible.
Step 2: Make the Tomato Pesto
