  • 2 large farm-fresh eggs
  • 1 cup Pamela’s All-Purpose Baking & Pancake Blend
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon salt
  • 3/4 cup filtered water
  • 1 teaspoon vanilla extract

Method
 

  1. Start by rounding up your kitchen gadgets. You’ll need a mixing bowl, a whisk, measuring cups, and a waffle iron. Don’t forget your favorite toppings because who can resist maple syrup and fresh berries?
  2. In a large mixing bowl, crack your 2 eggs and add 3/4 cup filtered water and 1 teaspoon vanilla extract. Whisk them together until well blended. The eggs are the glue that holds your fluffiness together.
  3. In another bowl, measure 1 cup of Pamela’s All-Purpose Baking & Pancake Blend and sprinkle in 1/4 teaspoon of salt. Mix these dry ingredients together. This ensures even distribution of the salt and adds to the consistency.
  4. Pour the dry mixture into the bowl with the wet ingredients. Add 1 tablespoon of vegetable oil at this point! Stir gently until everything is mixed well. Don't worry about being too perfect; a few lumps are okay. Overmixing can lead to tough waffles, and nobody wants that!
  5. While your batter rests for just a moment, power up your waffle iron. Each model is different. Check the instructions for the best preheating method. You want that iron nice and hot for the perfect crisp.
  6. Once your waffle iron is ready, ladle an appropriate amount of batter onto the iron (generally about 1/2 to 3/4 cup, depending on your waffle maker). Close the lid and let it cook for about 4 to 5 minutes. Trust the machine; you’ll know it’s done when the steam subsides.
  7. Carefully remove the waffle, as they can be a little delicate at first. I like to keep them warm in the oven while I cook the rest. Now, the fun begins! Load up your waffles with your favorite toppings and dig in.
