Pamela's Peach Cobbler Recipe

Ingredients
  

  • 1/4 cup melted unsalted butter
  • 1/2 cup carbonated water
  • 1 tsp baking powder
  • 3/4 cup Plain Greek Yogurt
  • 1/4 cup chopped nuts
  • 1/2 tsp ground cinnamon
  • 3 –4 ripe peaches
  • 2 cups Pamela’s All-Purpose Baking Blend
  • 3/4 cup granulated sweetener
  • 1 tsp pure vanilla extract

Method
 

  1. Start by preheating your oven to 350°F (175°C). We want it nice and warm for our cobbler.
  2. Wash, peel, and slice the peaches. If they're ripe, this will be easy. You want about 3-4 cups of nicely sliced peaches. If you notice they are extra sweet, feel free to reduce your granulated sweetener!
  3. In a large mixing bowl, combine the melted butter, baking powder, carbonated water, Greek yogurt, and vanilla extract. Stir until well combined. Then gradually add the Pamela’s All-Purpose Baking Blend and sweetener, mixing until just combined. Don’t over-mix! A few lumps are okay.
  4. Fold in the ground cinnamon and chopped nuts. This is where the texture starts to shine!
  5. In a greased baking dish, pour half of the batter. Then layer your peaches evenly across. Pour the remaining batter over the top—don’t worry if some of the peaches peek through. They’ll create a lovely visual.
  6. Pop the dish into the preheated oven. Bake for 40-45 minutes or until the top is golden and a toothpick inserted in the center comes out clean. Keep an eye on it; oven times might vary.
  7. Once baked, let it cool for about 15-20 minutes. It's tempting to dive right in, but allowing it to rest helps with cutting and gives the filling a chance to thicken.
