Ingredients
  

  • 1 large egg
  • ½ cup whole milk
  • ¼ cup melted butter or vegetable oil
  • cups Pamela's All-Purpose Baking Mix
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • ¾ to 1 cup fresh or frozen fruit—such as ripe bananas juicy peaches, or plump berries
  • ¼ cup coarsely chopped walnuts
  • ¼ cup finely shredded coconut

Method
 

  1. Start by preheating your oven to 350°F (175°C). This ensures everything is hot and ready by the time you are finished mixing the batter.
  2. Line your muffin tin with paper liners or grease it lightly with cooking spray. This will help your muffins release easily once baked.
  3. In a large bowl, whisk together the egg, whole milk, melted butter or vegetable oil, and pure vanilla extract. Make sure everything is well incorporated. You want the mixture to be smooth and homogenous.
  4. In another bowl, combine the Pamela’s All-Purpose Baking Mix and granulated sugar. Stir these together gently. This helps to evenly distribute the sugar and ensures the baking mix is ready for the wet ingredients.
  5. Slowly add the dry mixture into the wet mixture. Stir gently until just combined. It’s okay if the batter is a little lumpy—overmixing leads to tough muffins.
  6. Carefully fold in your choice of fresh or frozen fruit, walnuts, and shredded coconut. This is where personalization shines! Be gentle; you don’t want to crush your berries or bananas.
  7. Using a muffin scoop or spoon, fill each muffin cup about two-thirds full. Bake in the preheated oven for 18-20 minutes. You want them to be golden brown on top, and a toothpick inserted should come out clean.
  8. Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Then, transfer them to a cooling rack to cool completely.
  9. Now you have fresh, scrumptious muffins ready to be enjoyed!
