Ingredients

  • 2 pounds ground beef 80% lean, or substitute with ground turkey or chicken for a lighter version
  • ½ tablespoon extra virgin olive oil
  • ½ cup finely chopped yellow onion
  • ½ cup diced bell pepper any color
  • 1 cup crushed Ritz crackers or substitute with panko breadcrumbs for a crunchier texture
  • 2 large eggs lightly beaten
  • 1 cup shredded sharp cheddar cheese
  • ½ cup full-fat milk
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon Worcestershire sauce
  • ½ to ¾ cup tomato ketchup
  • 2 tablespoons packed brown sugar
  • 1 teaspoon yellow mustard
  • 1 tablespoon apple cider vinegar

Equipment

  • Medium skillet
  • Large bowl

Method

  1. Start by gathering all your ingredients. Preheat your oven to 350°F (175°C). You want everything at your fingertips to keep the momentum going.
  2. In a medium skillet over medium heat, add the olive oil, chopped onions, and bell peppers. Cook until the onions are translucent and the peppers are soft, about 4-5 minutes. This brings out their natural sweetness and flavor.
  3. In a large bowl, combine ground beef, sautéed vegetables, crushed crackers, diced cheese, beaten eggs, milk, Worcestershire sauce, salt, and pepper.
  4. Use your hands (or a sturdy spoon) to mix until everything is just combined. Be careful not to over-mix; this keeps your meatloaf tender.
  5. Transfer the mixture to a baking dish or form it into a loaf shape in a lined pan. Gently press it down to avoid air pockets. It should be shaped like a loaf but can be flattened slightly for even cooking.
  6. In a separate bowl, mix together the ketchup, brown sugar, mustard, and apple cider vinegar. Spread this mixture evenly on top of the meatloaf for an irresistible glaze.
  7. Place the meatloaf in your preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C). Let it rest for about 10 minutes before slicing. This allows the juices to redistribute, keeping it moist.

Notes

  • Use Fresh Ingredients: Fresh veggies will enhance the flavor and texture of the meatloaf.
  • Don’t Overmix: Overworking the meat mixture can lead to a tough texture. Combine ingredients just until mixed.
  • Resting Time Matters: Allowing the meatloaf to rest helps maintain its juiciness.
  • Experiment with Seasonings: Feel free to adjust the seasoning. Adding garlic powder or Italian seasoning can bring an exciting twist.
  • Check with a Meat Thermometer: Ensuring it reaches 160°F guarantees perfectly cooked meatloaf.
